Cooking tonight…and Fino’s Fast Firehouse Salsa Recipe

Making chili and stewed okra and tomatoes with homemade apple pie tonight so perhaps no time for blogging. Both recipes are coming out of yet another of my favorite cookbooks: Threadgill’s The Cookbook by Eddie Wilson. Threadgill’s is a small chain of home cooking restaurants in Austin, TX. They are Austin landmarks in terms of cooking (biscuits and gravy, chicken-fried steak, black-eyes peas…), have their own line of frozen food sold at the restaurants, and feature live music most nights. It was one of my favorite places when I lived there. This recipe book is easy to follow and full of Austin folklore – a real treat.

Fino’s Fast Firehouse Salsa (3FS)

2 ripe tomatoes
a fistfull of fresh cilantro
small green bell pepper
8 of your choice of hot pepper
1 tbsp salt

Cut up the cilantro with scissors and put into bowl. Chop up tomatoes and green pepper and add to bowl. Add salt. Mix with blender or hand mixer. I set aside a bowl and then add the hot peppers and reblend for the more hearty guests 🙂
